Griffin's iTalk Pro iPod Voice Recorder
Griffin Technology seems to have been one of the earlier makers of ipod accessorieslinks, so they're forgiven for using the cliched "i" in front of their products, including the iTalk Pro. As you can probably gather from the name, the iTalk Pro is a microphone (a pair of microphones, actually) that records directly to your iPod's hard drive. The quality isn't stellar - the highest quality setting is CD quality (44.1 KHz, 16-bit stereo) - so it's not meant to replace any music recording equipment, but as Jim Dunn of PLAYBACK:stl mentions in his review of Griffin's non-Pro version of the product, it does make for a great voice recorder for voice notes, interviews, etc. all attached to the iPod's relatively stable and consistent mechanics.
